Instructions
Step 1
Butterfly chicken breasts. Season with salt & pepper.
Step 2
Steam broccoli florets until tender, then drain & dice.
Step 3
In a large bowl, mix together cream cheese, mozzarella, spinach, diced broccoli, garlic powder, and red pepper flakes.
Step 4
Spoon mixture into middle of chicken breast and close around mixture. Wrap tightly in plastic wrap and place in freezer for 1 hour to firm up.
Step 5
While chicken is in freezer, chop basil, parsley & thyme. Set aside.
Step 6
Heat oil in large skillet over medium heat. Remove chicken from freezer and remove plastic wrap from chicken. Pat herbs into chicken breast. Place chicken in skillet and cook for about 5-8 minutes each side.
Step 7
Chicken is done when meat thermometer registers 165 when inserted into thickest part of chicken breast.
