Sweet and spicy hamburgers with ginger scallion aioli, crispy onions, and sweet potato wedges

Step 1

1. Preheat oven to 425F. Cut potatoes into 1/2 in thick wedges. Toss on baking sheet with drizzle of oil and a pinch of salt and pepper. Roast 25-30 min.

2. Trim and mince green onions, separating white from green. Peel and grate ginger. Peel and mince garlic.

3. In a small bowl, combine mayo, onion greens, 3/4 tsp soy sauce, 1/4 tsp ginger, 1/4 tsp sugar, and pinch of garlic.

4. In a larger bowl, combine beef, onion whites, and remaining soy sauce, ginger, and garlic. Form 2 Patty's slightly larger than buns
Step 5

5. When sweet potatoes have 10 min left, heat a drizzle of oil in a large pan over med-high heat. Add patties and cook 3-5 min per side. Halve and toast buns.
Step 6

6. Spread buns with aioli, top with burgers, chili sauce, and fried onions. Serve with wedged potatoes.
