Ingredients
4 servings

7 ouncesrice noodles
vermicelli

2 tablespoonsvegetable oil

1 tablespoonroasted sesame oil

1 ⅓ cupsedamame beans
or peas

1carrot
medium, peeled and cut into match stick sized strips

2 bunchesbroccolini

2 tablespoonswater
hot

1 x 2 inchfresh root ginger
piece, peeled and finally chopped

2garlic cloves
crushed

5scallions
finally sliced

2 ½ tablespoonstamari sauce

2 teaspoonsesame seeds
To Serve:
Instructions
Step 1
Cook the noodles according to the packet instructions, then rinse them in cold water, drain and set aside.
Step 2
Meanwhile, put the vegetable oil and a teaspoon of the sesame oil in a pan and place over medium high heat.
Step 3
Once hot, add the edamame beans or peas, carrot, broccoli, and tablespoons of hot water and fry for five minutes.
Step 4
Add the ginger and garlic and fry for another two minutes then add half of the scallions and fry for a final minute.
Step 5
Add the cooked noodles, soy sauce, most of the sesame seeds and the remaining roasted sesame oil.
Step 6
Toss everything together until the noodles are hot taste and adjust the seasoning with a little more tamari or sesame oil if necessary, then sprinkle over the remaining scallions and sesame seeds.
Step 7
Serve with a squeeze of lemon and Sriracha sauce, if using, and fresh grinder leaves.
