Instructions

Step 1
* Prepare the Lemon-Infused Olive Oil: * In a small saucepan, gently warm the 1/4 cup of olive oil with the zest of 1 lemon over low heat. Do not boil. Heat for 5 minutes. * Remove from heat and let it cool. Strain the oil through a fine-mesh sieve to remove the lemon zest.
Step 2
* Gently flake the sardines into smaller pieces, but keep some larger pieces intact.
Step 3
* In a small bowl, combine the lemon zest (from the 2 lemons), capers, chopped parsley, and the 2 tablespoons of reserved sardine oil.
Step 4
* Evenly distribute the sardine pieces over the focaccia dough.
Step 5
* Scatter the lemon-caper mixture, sliced red onion, and red pepper flakes over the sardines.
Step 6
* Drizzle with a little more olive oil.
Step 7
* Sprinkle with fresh parsley and a final drizzle of olive oil, if desired.
