BBQ Pork in plum sauce with stir-fried veggies

This recipe uses pork fillets pre-marinated from my local butcher, but you can also use pork steaks and a jar of plum sauce, coat the pork in the sauce and set aside in a bowl for half an hour to marinade. I also cook the pork on a BBQ griddle while stir frying on a wok burner also on the BBQ, but you can also use a fry pan and wok on a stove.

Instructions
Step 1
Mix pork with jar of plum sauce in a bowl, set aside in the fridge for half an hour. Note: omit this step if you are using pre marinated pork

Using a large pot, half fill with water, cover, and place on high heat to boil

Pre heat BBQ griddle


Step 4
Cut capsicum into strips (removing seeds), and cut broccoli into small florets. Chop Chinese broccoli and spring onions each into 5cm lengths. Peel carrots and cut in half lengthways, then slice them diagonally (julienne style).






Step 5
When the pot of water has come to the boil, add the rice and stir to mix. Cover briefly to turn to the boil, then remove the lid and cook the rice according to the time on the packet or approximately 9 minutes. Stirring occasionally.

Heat the wok, then add 1 tbsp of oil. Add all veggies into the wok and toss to mix.





Step 7
Place pork on hot griddle, so they are not overlapping. Turn them over after 3 minutes.

Step 8
Keep stirring, or toss the veggies for 2 minutes, then add both oyster sauce and the kecap manis. Keep stirring and mix to combine. Turn the pork over after it has been cooking for three minutes.


Step 9
Continue to stir the veggies for three minutes while the pork finishes to cook. Then, remove the pork from the heat and set it aside. Add the soy sauce to the veggies, mix through, and remove from heat.

Step 10
Check rice is cooked (it should be firm but not crunchy). When cooked, drain the rice.

To serve
Step 11
Place a serving of rice in a small bowl, top with stir-fried veggies, and slice up one pork steak per person, adding the sliced pork on top of the veggies.
