Instructions
Step 1
Grind buckwheat in vitamix
Step 2
Add all other ingredients except butter and cooking spray
Step 3
Blend until smooth
Step 4
Allow to rest 30 minutes to 24 hours

Heat a large cast iron skillet over medium heat
Step 6
Once pan is hot, spray with cooking spray, melt a little butter, and swirl to coat bottom of pan

Pour just enough batter to coat bottom of pan, swirl to distribute even thin coat

When it's set and bottom is nicely browned, flip over (crepe spatula works best, but 2 metal spatulas will do)
Step 9
Add filling if desired
Step 10
Once the bottom is browned and filling is cooked, roll up
Step 11
Serve
Step 12
Repeat for each crepe, adding more cooking spray and butter to the pan
