Instructions

Step 1
Add diced carrots and chicken broth in a large pot over medium heat until coming to a boil. Reduce to simmer for 20 minutes or until the carrots are soft.
Step 2
Brown bacon in a skillet. Remove cooked bacon. Into the same pot with the rendered bacon fat, add diced onion and cook 6-8 minutes until onions soften (do not brown). Add minced garlic and 1/8 tsp black pepper, and stir another minute.
Step 3
Add the cooked onion and garlic to the carrots. Cook another minute.
Step 4
Puree soup in a blender in batches or use an immersion blender.
Step 5
Return soup to pot and stir in heavy cream. Season to taste with salt and pepper.
