Step 1

Cook Rice and Prep
- Boil the kettle. Half-fill a medium saucepan with boiling water.
- Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 12 mins. Drain.
- Meanwhile, trim green beans and roughly chop. Finely chop or crush garlic.
- Drain sweetcorn.
- In a small bowl, combine oyster sauce, ginger paste, sweet chilli sauce and a splash of water.
Step 2

Cook Fried Rice
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook corn, green beans and diced bacon, breaking up with a spoon, until golden, 5-7 mins.
- Crack the egg into the pan and scramble until cooked through, 1-2 mins.
- Stir in cooked basmati rice, garlic and the soy sauce. Cook until warmed through, 2-3 mins.
- Season with salt and pepper.
- Transfer to serving bowls and cover to keep warm.
Step 3

Cook Beef
- In a medium bowl, combine beef strips, the cornflour and good pinch of salt and pepper.
- Wipe out frying pan and return to high heat with a drizzle of olive oil.
- When oil is hot, cook beef strips, tossing, in batches, until browned and cooked through, 1-2 mins.
- Reduce heat to medium, return all beef to pan and stir in oyster sauce mixture, until coated, 1 min.
Step 4

Finish & Serve
- Top bacon fried rice with Mongolian beef.
- Tear over coriander to serve.
