Instructions

Step 1
Cook about 2 cups of rice, either sticky white rice or fluffy basmati rice
Step 2
Preheat oven to 450 F. Prep a rimmed baking sheet with parchment paper.
Step 3
Drain tofu of water, chop into 1/2in slabs, press more water out with paper towels, cut into cubes.
Step 4
In a large bowl, toss tofu cubes in corn starch. Bake at 450F for about 20 min.
Step 5
Heat 2 tbsp cooking oil in large skillet, saute onion & veggies til onion is turning golden brown
Step 6
Add in tikka spice paste and 3/4 cup water, cook til water is evaporating then add tomatoes, cream, sugar
Step 7
Tofu should be done by this time, remove from oven and fold it into the veggies and sauce mix. Serve over rice!
