Ingredients

1 Tbspolive oil

2cloves garlic
minced

1leek
small, or shallot, thinly sliced

1zucchini
small, diced

1 cupchicken
shredded cooked, or chickpeas for veg version

4 cupslow-sodium veggie broth
or chicken

½ cuporzo
cooked gluten-free, or quinoa

3 cupsSwiss chard
chopped, or spinach

1 Tbspfresh dill
or parsley

0.5lemon
Zest and juice of, optional, or skip for lower acid

salt

white pepper
to taste
Instructions
Step 1
Sauté leek and garlic in olive oil until soft. Add zucchini and cook for 2–3 more minutes.
Step 2
Add broth and bring to a gentle simmer.
Step 3
Stir in chicken (or chickpeas) and cooked orzo/quinoa. Simmer for 5 minutes.
Step 4
Stir in greens and herbs. Cook until wilted.
Step 5
Finish with lemon zest and a small splash of juice if tolerated.
