Ingredients
3 servings
1 ½ cupsrice
cooked
1 ½ cupschicken
chopped leftover, mix of rotisserie and thighs
½ cupcapsicum
finely chopped
½ cupcauliflower
grated or finely chopped
½ tspsmoked paprika
½ tspground cumin
1 clovesgarlic
or 1 tsp garlic paste
½ tsponion powder
or chopped spring onion added at the end
Salt
pepper
to taste
½ cupcheese
grated, Colby, Edam
avocado
Optional toppings, sliced
yoghurt
or sour cream
Instructions
Step 1
1. Sauté veg: In a large non-stick pan, heat a splash of oil. Add capsicum and cauliflower. Cook ~3 mins until softened slightly. Add garlic, onion powder, and spices.
Step 2
2. Add chicken & rice: Stir in chopped chicken and rice. Break up any rice clumps with a spoon. Let it toast for 1–2 mins, then stir. Repeat once or twice so you get some golden bits.
Step 3
3. Season + cheese it up: Taste and adjust salt/pepper. Stir through half the cheese, let it melt. Scatter the rest over top, cover for 2 mins to melt fully.
Step 4
4. Serve with toppings: Optional avocado slices or a cooling blob of yoghurt to finish.
