Instructions
Step 1
Mix starter, water, sugar. Add bread flour, salt and mix.
Step 2
Cover with damp tea towel and let rest for 60 minutes.
Step 3
Shape into smooth ball. Cover with shower cap and bulk ferment on counter.
Step 4
Once doubled, dump onto counter and divide into 8 equal portions.
Step 5
Shape into balls and let rise 10 minutes.
Step 6
Poke hole in middle of each and let rise 20 minutes.
Step 7
Boil water in pot with baking soda and salt
Step 8
Boil bagels 30 seconds each side
Step 9
Add toppings while still wet.
Step 10
Bake at 425 for 20-25 minutes.
