Hearty Butter Chicken w/ Basmati

This meal prep slowcooker recipe is meant for freezing in individual servings. This is not a traditional butter chicken as I like to add ingredients and make it hearty, such as sweet potatoes and other veg. Substitute the chicken with chickpeas to make it vegetarian.

Ingredients
12 servings
2 lbschicken breast
cubed
salt
pepper
1sweet potato
large, cubed
2onions
sliced
2carrot
large diced
4celery stalks
diced
2 Tbspginger minced
2 Tbspgarlic
minced
6 Tbspbutter
2 Tbspgaram masala
2 Tbspcurry
1 tspchilli powder
add more if you like heat
2 tspturmeric
2 Tbspsugar
1 canTomato paste
1can crushed tomatoes
1 cchicken stock
1 ccream
or to taste
Fresh herbs
parsley, cilantro
lemon juice
6 cbasmati rice
cooked, cooled
Instructions
Step 1
Season chicken with salt and pepper
Step 2
Put all ingredients in slow cooker except for cream, fresh herbs, and lemon juice
Step 3
Put on high for 1 hr, then on low for 4 hrs
Step 4
Add cream, fresh herbs, lemon juice, and salt and pepper to taste
Step 5
Cool to room temperature
Step 6
In freezable meal prep containers evenly distribute rice and sauce
Step 7
Sprinkle more fresh herbs over top
Step 8
Label and freeze
