Ingredients

Oats

1 ½ cupswater

1 cuprolled oats
organic

½ tspcinnamon

¼ tspcardamom

¼ tspground ginger

1 Tbspmaple syrup
optional

½ cupsoy milk
organic, or plant-based milk of your choice

Instructions
Step 1
Bring water to a boil in a pot with a dash of salt, if desired, Add oats and return to a boil. Reduce heat to medium-low and cook uncovered, stirring occasionally, until the oats are soft, about 5 minutes.
Step 2
Add the spices, maple syrup, and soy milk. Remove from heat and stir well to combine.
Step 3
Divide the oats between two bowls and top with 1 tablespoon of each seed, I like to place the seeds side by side in rows, but you can arrange the seeds however you like. Enjoy!
Chef's Note/ Substitutions
Step 4
In place of oats, try quinoa. Increase the water to 1 3/4 cups, and cook according to the package instructions. You can use a blend of nuts and seeds you like most. Try sliced almonds, crushed walnuts, sunflower seeds, and chopped Brazil nuts, to give you a few ideas.
Additional Topping Ideas

On top, add mixed berries, your favorite dried fruit, swirl in nut or seed butter, or dollop with homemade jam.
Microwave Instructions

Place oats and water in a microwave-safe bowl, adding a dash of salt if desired. Microwave on high for 2-3 minutes, watching closely to prevent overflow. Stir and continue microwaving in 30-second intervals until the oats are soft. Stir in the spices, maple syrup, and soy milk, mixing well to combine. Divide the oats between two bowls and top with 1 tablespoon of each seed. Arrange the seeds however you like side by side in rows or scattered for a more rustic look, Enjoy!
