Instructions

Step 1
Prepare the Stuffing: Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.

Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Once cooled, gently squeeze out any excess liquid from the spinach. In a bowl, combine the wilted spinach, crumbled feta cheese, and red pepper flakes (if using). Set aside.

Prepare the Meatloaf Mixture: In a large bowl, gently combine the ground beef, ground turkey, gluten-free breadcrumbs, chopped onion, minced garlic, beaten egg, gluten-free Worcestershire sauce, Dijon mustard, Italian seasoning, salt, and pepper. Be careful not to overmix.

Assemble the Rolled Meatloaf: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil.

On the prepared baking sheet, gently pat the meatloaf mixture into a rectangle about 12x15 inches and about 1/2 inch thick.

Spread the spinach and feta stuffing evenly over the meat mixture, leaving a 1-inch border along one of the long sides.

Starting from the long side with the stuffing, carefully roll the meatloaf up like a jelly roll. Pinch the seams and ends to seal in the stuffing.

Prepare the Glaze (Optional): In a small bowl, whisk together the gluten-free ketchup, apple cider vinegar, and brown sugar.

Bake the Meatloaf: If using the glaze, spread it evenly over the top of the rolled meatloaf. Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).

Rest and Serve: Let the meatloaf rest for 10-15 minutes before slicing and serving.
