Instructions
Step 1
Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions.



Step 2
Meanwhile, heat butter and olive oil in a large pan.


Step 3
Sauté the chicken strips for 4-5 minutes until golden brown. Remove from the pan and set aside.
Step 4
In the same pan, sauté the garlic and leeks for 2 minutes.
Step 5
Add the spinach and let it wilt down.


Step 6
Drain the pasta, reserving a small cup of cooking water. Add the pasta to the pan.

Step 7
Stir in the cooking cream, lemon zest, and 2 tablespoons lemon juice.

Step 8
Add Parmesan cheese and the cooked chicken strips. Mix well, adding a splash of pasta water if needed to make it creamy.
Step 9
Season to taste with salt, pepper, and optional chili flakes.
Step 10
Serve immediately.
