Instructions

Step 1
Prepare the Chicken:

• Pound the chicken breasts to an even thickness of about ½ inch.

• Season both sides with salt and pepper.
Step 4
• Heat the vegetable oil in a skillet over medium-high heat.

• Sear the chicken for 4–5 minutes on each side, or until fully cooked.

• Remove from heat and let rest for a few minutes before slicing into ¼-inch strips.

2. Cook the Pasta:

• While the chicken is cooking, bring a large pot of salted water to a boil.

• Cook the pasta according to package instructions until al dente.

• Drain and set aside.

3. Sauté the Mushrooms:

• In the same skillet used for the chicken, add the sliced mushrooms.

• Sauté over medium-high heat until browned and tender, about 5–7 minutes.

• Season with a pinch of salt and pepper.

4. Prepare the Gorgonzola Sauce:

• In a separate saucepan, combine the half-and-half and crumbled gorgonzola cheese.

• Heat over medium heat, stirring constantly, until the cheese is melted and the sauce has thickened slightly.

5. Assemble the Dish:

• In a large mixing bowl, combine the cooked pasta, sautéed mushrooms, and sliced chicken.

• Pour the gorgonzola sauce over the mixture and toss to coat evenly.

• Divide among serving plates.

• Top each serving with chopped Roma tomatoes and a sprinkle of shredded Parmesan cheese.
