Instructions
Step 1
cut chicken breast in half horizontally and flatten beetween 2 sheets of parchment paper. Use a mallet or rolling pin
Step 2
salt and pepper breast and dredge with flour.
Step 3
Heat oil and sautee chicken breast on high heat about 2 mns per side. Set aside.
Step 4
Reduce heat, add butter and garlic to skillet and saute briefly. Add wine and stock and reduce for a minute, then add capers and lemon juice. Let sauce reduce a bit then return chicken to skillet just to warm through. Remove breast, add parsley to sauce, check for seasoning and serve.
