Vanilla Greek Yogurt (Side):
280g 0% vanilla Greek yogurt
Healthy Protein Cupcakes (Main):
Ingredients:
1/3 cup dry rolled oats (blended into powder)
1 scoop protein powder (cookies & cream flavor used here)
100g vanilla Greek yogurt
1 egg
1/3 tsp baking soda
1 tbsp special dark cocoa powder (optional - adds about 10 calories)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Mix all ingredients in a bowl. If the batter is too thick, add 1-2 tablespoons of water to reach desired consistency.
3. Spray a muffin pan or baking sheet with oil spray.
4. Divide the batter evenly into muffin cups.
5. Bake for about 15 minutes, or until a fork inserted into the center comes out clean.
