Triple Chocolate Protein Zucchini Muffins

🥒Do you struggle with getting your veggie servings in!? Then you need to follow for my veggies for dessert series! Today we have these AMAZING TRIPLE CHOCOLATE 🍫Protein zucchini muffins. I piled on the frosting to make mine a whopping 20g of protein!! And these are so healthy and wholesome, you can trick everyone into thinking you’re eating a dessert for breakfast! 🥒These muffins are great for picky eaters, those who want to increase their veggie intake, or just any veggie (or chocolate!) lover out there! Makes about 20 servings. Total calories for 1 muffin: 147 Protein: 15g Carbs: 14g Fat: 4g

Instructions

Step 1
Preheat the oven to 350℉ degrees.
Step 2
•Shred your zucchini into a towel and sprinkle with salt. Squeeze out the excess water as much as possible prior to adding to your batter.
Step 3
•In a large bowl, mash your bananas and add remaining wet ingredients- milk, oil, yogurt, vanilla and eggs. Mix to combine.
Step 4
•Add your dry ingredients- flour, protein powder, baking soda, baking powder and salt. Mix until combined, but don’t over mix.
Step 5
•Fold in chocolate chips and zucchini.
Step 6
•Place evenly in muffin cups filled about 3/4 (I made 20)
Step 7
•Bake in oven for 25-30 minutes or until tops are lightly brown and toothpick comes out clean.
Step 8
•Let cool and top with frosting (Mix ingredients until you get a thick consistency. Adjust as needed according to recipe) Sprinkle with shaved chocolate if desired!
