Browning the Meat: Start by heating 2 tablespoons of olive oil in a large, deep skillet or Dutch oven over medium heat. Add the beef or pork strips and cook until browned, breaking it up with a spoon as it cooks. Once fully browned, drain off any excess grease.

Building the Flavor Base: Next, stir in the diced onion, green bell pepper, and garlic. Let these cook together for about 5 minutes until they’re softened and aromatic. This step is crucial because it builds the foundation of your jambalaya’s flavor.

Adding Cabbage: Now it’s time to add your chopped cabbage. It might look like a lot at first, but cabbage wilts down quickly as it cooks. Stir it into the skillet, mixing well with the other ingredients. Let it cook for 5–7 minutes, stirring occasionally, until it starts to wilt.
