Instructions
Roast the Fish
Step 1
Preheat oven to 400°F (200°C). Place fish fillets on a baking sheet lined with parchment paper. Drizzle with olive oil & lemon juice, then season with garlic powder, paprika, oregano, salt, and pepper. Bake for 12–15 minutes, or until fish flakes easily with a fork.

2️⃣ Prepare the Quinoa Salad:
Cook quinoa according to package instructions and let it cool.
In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
Pour dressing over the quinoa mixture and toss to combine.

3️⃣ Serve & Store:
Divide the roasted fish and quinoa salad into meal prep containers.
Store in the fridge for up to 4 days.
