Instructions

Step 1
In a small saucepan, combine quinoa, water, and 1/2 cup salsa. Bring to boil. Dice sausage links.
Step 2
Add sausage. Reduce heat, cover saucepan, and simmer for 15 minutes, or until germ ring spirals off the seed.
Step 3
Heat tortillas, one at a time, in a dry skillet over high heat.
Step 4
On a flat surface or plate, spoon about 1/2 cup quinoa onto each tortilla and top with a portion of avocado, Salsa, and dollop of yogurt.
Step 5
Fold bottom of tortilla up, then roll it from one side to form a cylinder.
