Instructions

Step 1
Heat the olive oil in a medium skillet over medium heat. Add the grated carrot to the skillet and sauté for about 3-4 minutes, or until it becomes tender.
Step 2
While the carrot is cooking, crack the eggs into a bowl, add salt, pepper, and chili flakes if using, and whisk until well combined.
Step 3
Pour the eggs over the sautéed carrots in the skillet, gently stirring to combine. Cook for about 4-5 minutes, or until the eggs are set but still fluffy.
Step 4
Once the eggs are cooked through, remove the skillet from heat and gently fold in the diced avocado.
Step 5
Drizzle the fresh lemon juice over the dish, add a bit more salt and pepper to taste, and garnish with your choice of fresh herbs.
