Ingredients

3 ½ cupszucchini
shredded unpeeled

¼ tspsalt

2eggs

¼ cupgrated parmesan cheese

4 ozreduced-fat shredded mozzarella cheese
divided

4 ozreduced fat shredded cheddar cheese
divided

cooking spray

0.5 lblean ground beef
90-94%

¼ cuponion
chopped

1 x 14.5 ozcan petite diced Italian tomatoes

1green bell pepper
small, chopped
Instructions
Step 1
Preheat oven to 400*F

Step 2
Place zucchini in a strainer, and sprinkle with salt. Let stand 10minutes, and then press to release moisture.



Step 3
Combine zucchini with eggs, parmesan, and half of the mozzarella and cheddar cheese





Step 4
Press mixture into a lightly greased 9x9 baking dish. Bake uncovered, for 20 minutes



Step 5
Meanwhile, cook the beef and onion in a medium skillet until done.



Step 6
Drain any liquid, and then stir in the tomatoes




Step 7
Pour beef mixture over the zucchini and sprinkle with the remaining cheddar and mozzarella cheese.




Step 8
Top with green pepper.


Step 9
Bake for an additional 20 minutes or until heated through
