These macro-friendly, low calorie taquitos are perfect as an appetizer for a large group or as a meal prepped snack that you can have throughout the week. I like to pair with a simple yogurt dipping sauce (usually 2:1 ratio of fat free Greek yogurt and any hot sauce of choice + a dash of garlic/onion powder)
You could also easily just prepare half as many taquitos as I show here (I made 27) and store half the street taco chicken as a meal prep for other recipes through the week! Or - meal prep the meat, and prep these fresh 4-5 at a time, do what works best for you!

40gfat free cheddar

40g2% cheddar

corn tortillas
Extra thin, I used total
Instructions
Step 1
Add 1-2 spoonfuls of the chicken mixture to each tortilla, and roll
Step 2
Bake at 420 degrees~20 mins
