Step 1
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the cottage cheese, eggs, olive oil, honey, lemon juice, and vanilla extract until smooth.

In another bowl, combine the whole wheat flour, baking powder, baking soda, salt, poppy seeds, and lemon zest.

Add the dry ingredients to the wet ingredients and mix until just combined.

Spoon the batter into the muffin cups.
