Instructions
Step 1
Dry-sauté proteins: Cook ground turkey in a non-stick Dutch oven without oil, breaking into small pieces. Remove. Lightly brown turkey kielbasa. Remove.
Step 2
Sauté vegetables: Add 1 tbsp oil to pan. Cook onions, peppers, celery, and mushrooms until soft, 10 minutes. Add garlic and spices; cook 2 minutes.
Step 3
Combine: Add wild rice, cooking 2 minutes. Return proteins to pan with tomatoes, broth, and water. Bring to boil.
Step 4
Simmer: Reduce heat, cover, simmer 45 minutes until rice is tender.
Step 5
Finish: Stir in cauliflower rice, cook 5 minutes until tender. Rest 10 minutes.
