Step 1
1- Heat the olive oil in a pan over medium heat, then add the Prawns. Cook and then set aside.

2- In the same pan, add the thinly sliced bell pepper and julienned zucchini, stir-frying until they are just tender.

3- Add the rinsed and drained shirataki noodles to the pan, tossing them with the cooked vegetables and chicken.
Step 4
4- In a small mixing bowl, combine almond butter, lime juice, fish sauce, and soy sauce or tamari. Mix these together until well combined. If desired, add chili flakes for extra heat. Dilute with a little water if the sauce is too thick.
Step 5
5- Pour the sauce over the noodle, vegetable, and chicken mixture in the pan. Toss everything together to ensure the ingredients are well coated with the sauce. Heat the mixture through.
Step 6
6- Once heated, serve the Pad Thai garnished with chopped green onions, fresh cilantro, and crushed peanuts, if using.
