Ingredients

900gbeef chuck
cubed

2 Tbspolive oil

2onions
large, diced

3cloves garlic
minced

3 Tbspsweet Hungarian paprika

1 tspcaraway seeds

1red bell pepper
chopped

2tomatoes
diced, or 1 can crushed tomatoes

2carrots
sliced

2potatoes
cubed, optional

4 cupsbeef broth

1bay leaf

salt
to taste

black pepper
to taste

1 Tbsptomato paste

1 tspvinegar
optional, for balance

fresh parsley
for garnish
Instructions
Step 1
Sear the beef:
In a Dutch oven, heat the olive oil over medium-high heat. After patting the meat dry, add salt and fry it for 3–4 minutes on each side until it is browned. Take out and put aside.
Step 2
Sauté the Aromatics:
Put the onions in the same pot and simmer for five minutes, or until they are tender. Add the caraway seeds, garlic, and paprika; simmer for 1 minute, being careful not to burn the paprika.
Step 3
Deglaze and Simmer:
Stir thoroughly after adding the bell pepper, tomatoes, and tomato paste. Add the bay leaf, beef broth, and the beef back into the pot. After bringing to a boil, lower the heat, cover, and simmer for one and a half hours.
Step 4
Add the vegetables:
Stir in the potatoes and carrots, if using, and simmer for a further half hour, or until they are soft.
Step 5
Adjust and serve:
By adding salt, pepper, and vinegar if necessary. Serve with dumplings or crusty bread and garnish with fresh parsley.
