Instructions
Soak the kombu:
Step 1
Place kombu in 3 cups of water and soak for 30 minutes (can soak longer if desired).
Heat the kombu water:
Step 2
Slowly heat over medium.
Step 3
Just before boiling (small bubbles at edges), remove the kombu.
Add bonito flakes:
Step 4
Turn off heat. Add 1 small handful of bonito flakes.
Step 5
Let steep for 2–3 minutes, until they sink.
Strain:
Step 6
Pour through a fine mesh strainer or cheesecloth into another pot or bowl.
Step 7
Discard or compost the spent flakes (or use in furikake).
Step 8
Now you have a beautiful, umami-rich dashi base for miso soup.
