4russet potatoes
or a mixturewith Yukon gold

1 Tbspolive oil
½ tspItalian seasoning blend with rosemary

½ cupmilk
or vegetable broth

2 tspolive oil

½ tspsmoked paprika
Instructions
Step 1
Wash and chop potatoes into large chunks. Coat a glass baking pan with 1 Tbsp olive oil
Step 2
Add chucked potatoes. Top with Italian seasoning. Stir to coat the potatoes.
Step 3
Bake at 375 for 30-40 minutes or until potatoes are soft on the inside and browned on the outside. Remove from oven.
Step 4
In the same pan lightly mash the potatoes. Add 1/2 c. milk or vegetable broth. Mix to until desired consistency. Smooth out the potato mixture in the pan,along several divets or shallow dents.
Step 5
Mix 1 tsp. Olive oil with 1/2 tsp. smoked paprika. Pour into the shallow divets. Salt and pepper to taste.
