Instructions

Step 1
Place the tempeh into an air fryer for 10 minutes at 200°C (or under a grill for 10 minutes). Remember to turn the tempeh halfway through the cooking time.
Step 2
While the tempeh is cooking; pan-fry the leeks in a splash of sesame oil and a pinch of curry powder over a high heat
Step 3
After a couple of minutes when the leeks soften, add the peppers, mushrooms, and beansprouts. Pan-fry for a few more minutes
Step 4
Cook the noodles per the packet instructions then drain. Add these to the pan.
Step 5
Move everything to the side of the pan and crack an egg into the empty side. Once 80% cooked, scramble the egg with a wooden spoon. Mix everything together.
Step 6
Season to taste with the salt and pepper. Finish with sesame seeds and chopped carrot.
