1 poundground beef
onion
medium, chopped
1 Tbspgarlic
1 cuprice
rinsed
10 ozcan corn
drained
10 ozcan black beans
drained and rinsed
1 x 10 ozcan rotel
not drained
8 ozcan tomato sauce
1 ½ cupsChicken Broth
2 cupsshredded cheese
cilantro
sour cream
tortillas
½ tspsalt
½ tsppepper
2 tspchili powder
1 tspcumin
1 tspdried cilantro
pico de gallo
taco sauce
Instructions
Step 1
Heat pan to medium heat. Add the ground beef, onion, and seasonings. Brown. Add the garlic
Step 2
Add the rice, corn, black beans, rotel, tomato sauce, and chicken broth. Stir and bring to a simmer. Cook covered for 15-20 minutes.
Step 3
Stir in cheese until melted. Add cheese to the top and melt in oven. Add cilantro for color and sour cream if desired. Serve with tortilla chips or tortillas.
