Creamy Leek Gnocchi

This is a versatile comforting recipe that can be made in about 20 minutes. Great for when you don't want to cook or in winter.
Is still great without bacon and quicker to make as well as either pasta instead of Gnocchi.
I don't measure things when I'm cooking, so I made need to make adjustments to the recipe.

Step 1
Step 1: SautΓ© the bacon (if using) till golden, then add the leeks and garlic.
Step 2: Boil a pot of water with some salt in it for your Gnocchi or pasta of choice and cook till it's just a little under done.
Step 3: Add mushrooms or any other veg you want along with salt Peper and parsley.
Step 4: Once finished, reserve about a cup of water and drain the rest through a colander.
Step 5: Add the cream to the sauce pan and mix through, then add the gnocchi, parmasan cheese and a little bit of the pasta water at a time till you get the sauce consistency you like. Then, serve with a little cheese on top and enjoy π
