Instructions

Step 1
Finely chop / mince garlic. Sauté in oil for 2 minutes

Peel and cube pumpkin. Add it with garlic. Cover and cook. Add a few spoons of water to help cook the pumpkin

Prepare your salsa by blending or finely chopping all the ingredients. Keep aside for assembly

Cut tofu into cubes or strips and saute. Preferably same pan as the one used to cook pumpkin so that it absorbs the flavour

Add 3 eggs, finely chopped spinach, and salt to a bowl. Beat the omelette and pour 1/2 of it on the pan. Spread it out and add a chapati on top. Cook on both sides
