Happy Cow Stuffed Chicken

Had some happy cow cheese leftover from a charcuterie board and decided to experiment

Instructions

Step 1
Preheat oven to 425. (Place parchment paper on baking sheet for easier clean up)
Step 2
Butterfly chicken breasts. Spread happy cow cheese inside.
Step 3
Place chicken breasts on prepared sheet pan
Step 4
Spread mayonnaise over top of chicken breasts, sprinkle with italian seasoning

For the breading

Step 5
Mix breadcrumbs, parmesian, Salt, pepper, and onion powder in a bowl
Step 6
Sprinkle breadcrumb mixture on top of chicken breasts generously. (About 2-3 layers of breadcrumbs)
Step 7
Bake for 25 minutes
Step 8
Pair with a side of your choice (pictured= roast broccoli and cauliflower)
