Ingredients
4 servings
150gquinoa
cooked
60gchickpeas
cooked or canned, drained & rinsed
50gcherry tomatoes
halved
40gcucumber
diced
30gred onion
thinly sliced
30gKalamata olives
halved
30gfeta cheese
or dairy-free if preferred
10gfresh parsley
chopped
1 Tbsplemon juice
1 tspolive oil
salt
to taste
pepper
to taste
2 Tbsphummus
baby spinach
or arugula
za’atar
or oregano
Instructions
Step 1
If not already cooked, prepare quinoa and let cool slightly.
Step 2
In a large bowl, combine quinoa, chickpeas, tomatoes, cucumber, onion, and olives.
Step 3
Drizzle with lemon juice and olive oil. Season with salt and pepper.
Step 4
Gently fold in feta and parsley.
Step 5
Serve with optional hummus and greens if using.
Step 6
Portion for serving: 2 servings for him, 1 for her, and 1 for leftovers.
