Step 1
Butterfly the chicken breasts into two equal size halves

Mix together the panko breadcrumbs and parmesan in a shallow tray.
Step 3
Crack the eggs into a bowl and mix together
Step 4
Put the flour into a bowl.
Step 5
One by one get the chicken into the flour, then into the egg and finally press firmly into the breadcrumbs.
Step 6
After this dip again into the egg then once again into the breadcrumbs to ensure it’s fully coated
Step 7
Cook the chicken for 7 minutes at 170 degrees in the airfryer
Step 8
Flip the chicken and cook for a further 3 minutes
Step 9
On a layer of baking paper, place the chicken, smother in tomato sauce and cover in the mozzarella
Step 10
Cook for a further 3 minutes until the cheese has melted and bubbling
Step 11
Serve immediately
