Instructions

Step 1
Combine 1/2 cup warm water, 2T yeast, and 1T sugar and set aside while moving to the next step. Let this rise for at least 5 minutes.
Step 2
Add 2/3 cup olive oil and 2/3 cup honey into the mixing bowl. Add the 2T of salt, half of the flour (7 of 14 cups / 840g of 1680g), and 5 cups warm water. Pour in the yeast mix and mix until evenly blended.
Step 3
Add the rest of the flour (7 of 14 cups / 840g of 1680g) and mix until dough clings into a ball.
Step 4
Roll the dough into a ball so it can be evenly divided in quarters.
Step 5
Roll each ball into a longer roll and place into a bread pan with parchment paper on the bottom. Let rise for at least one hour.
Step 6
Bake at 375 for 30 minutes.
Step 7
Rub butter on the tops of the hot loaves and allow to cool until the pan is cool. Then remove and place on a cooling rack.
