Ingredients
4 servings

3 Tbspextra virgin olive oil

0.5juice of lemon

1 Tbspapple cider vinegar

½ tspgarlic powder

1 poundchicken breasts

1 cupnon dairy yogurt

1 Tbspevoo

½ cupPersian cucumber
grated

2garlic cloves
minced

1juice of lemon

sea salt

3 cupsspinach leaves

½ cupcherry tomatoes
sliced

0.5red onion
sliced

feta cheese

kalamata olives
Instructions
Step 1
1. In a small bowl, mix together olive oil, lemon juice, cider vinegar and garlic powder. Put the chicken thighs in a large bowl and pour marinade over them. Refrigerate for 30 min.
Step 2
2. Mix together Tzatziki ingredients and set aside.
Step 3
3. Heat remaining 1 tbsp olive oil in large skillet over medium heat. Add chicken and cook on each side 8-10 min. (Temp of 165°).
Step 4
4. Remove chicken from skillet and slice into pieces.
Step 5
5. Combine salad ingredients and serve in 4 bowls, topped with chicken and Tzatziki sauce.
