Instructions
Step 1
Stir together preserves, basil, soy sauce, and garlic in a small bowl. Cook shrimp in hot oil in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally.
Step 2
Add apricot mixture. Cook, stirring, 3 minutes or until shrimp are done and coated with sauce.
Step 3
Note: Garnish with fresh basil leaves, if on hand.
Step 4
Heat rice according to package directions. Cook snow peas according to package directions. Place in a large bowl; add oil and sesame seeds.
Step 5
Toss and season with salt and pepper, if desired.
