hearty, flavour-packed chicken and vegetable soup recipe using everything you’ve got. The homemade chicken stock and full chicken will give it that rich, nourishing depth.

Instructions

Step 1
Prep the Chicken:

If not already cut, portion the chicken into 4–6 pieces (or cook whole for a rustic soup).
Step 3
Season lightly with salt and pepper.

Sear the Chicken (Optional for more flavour):

In a large pot, heat 1–2 tbsp olive oil or butter.
Step 6
Brown the chicken pieces on both sides (don’t cook through – just colour them). Set aside.

Sauté Aromatics:

In the same pot, add a bit more oil if needed.
Step 9
Add garlic and sauté for 30 seconds.
Step 10
Add the Coles vegetable soup mix and cook for 3–5 minutes until slightly softened.
Step 11
Simmer the Soup:
Step 12
Return the chicken to the pot.
Step 13
Pour in the chicken stock to cover everything.
Step 14
Add bay leaves, thyme, parsley, turmeric (if using), and more cracked black

Bring to a boil, then reduce to a simmer.

Simmer uncovered for 45–60 minutes, until the chicken is fall-apart tender.

Shred the Chicken:

Remove the chicken, shred the meat off the bones, and discard skin/bones.

Return the shredded chicken to the pot.

Taste and adjust seasoning (salt, pepper, herbs).

Optional: Add a small handful of pasta/barley/potatoes in the last 15–20 minutes and simmer until soft.
