Quinoa Sushi Rolls

Instructions

Step 1
If you need to cook quinoa, add about 1/4 cup of quinoa to 1/2 cup of stock and simmer for about 10 minutes until cooked.
Step 2
To cooked quinoa, add the rice wine vinegar, rapadura sugar, salt and pepper to taste.
Step 3
Spread 3/4 cup of cooled quinoa onto the nori sheets (shiny side down) leaving a 1cm edge. Add the chosen fillings and stack neatly on top of each other, leaving the 1cm edge. Avoid overfilling.
Step 4
Gently begin rolling the nori sheet, ensuring your tuck fillings under the nori sheet as you roll. Use a sushi mat if you need assistance. Roll tightly and press firmly.
Step 5
Brush the overlapping edges with water and press gently to help it seal shut,
Step 6
Cut the rolls into bite sized rolls, 4-5 depending on size.
Step 7
Serve with soy sauce, mayonnaise or sweet chilli sauce.
