Instructions

Step 1
Make Chicken Patties: Ingredients: 1 lb ground chicken, 1 large egg, 1/4 cup breadcrumbs (optional), 1/4 cup finely chopped onion (or 1 tbsp onion powder), 2 cloves garlic (minced), salt, black pepper. In a medium bowl, combine the ground chicken, egg, breadcrumbs (if using), finely chopped onion (or onion powder), and minced garlic. Season generously with salt and pepper. Mix everything gently with your hands until just combined – do not overmix.
Step 2
Form Patties: Ingredients: Prepared chicken mixture. Form the mixture into 4-6 evenly sized patties, about 1/2-inch thick.
Step 3
Cook Patties: Ingredients: 1 tbsp olive oil, chicken patties. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Carefully place the chicken patties in the hot skillet. Cook for 5-6 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). You may need to do this in batches.
Step 4
Toast Seeds: Ingredients: 1/4 cup sunflower seeds. While the patties cook (or using a separate dry skillet), add the sunflower seeds to a small, dry skillet over medium-low heat. Toast, stirring frequently, for 2-4 minutes until lightly golden and fragrant. Watch carefully as they can burn quickly. Remove from heat immediately.
Step 5
Sauté Greens: Ingredients: 1 large bag (5-6 oz) fresh spinach or kale, 1 tbsp olive oil (if needed), salt, black pepper. In the same skillet used for the patties (or a separate one), add another tablespoon of olive oil if needed. Add the fresh spinach or kale. Sauté for 3-5 minutes, stirring occasionally, until the greens are wilted. Season lightly with salt and pepper.
Step 6
Serve: Ingredients: Cooked chicken patties, sautéed greens, toasted sunflower seeds. Serve the hot chicken patties alongside the sautéed greens. Sprinkle the toasted sunflower seeds over the greens or directly onto the patties before serving.
