Instructions
Step 1
Place chicken in oven tray. Coat with olive oil and sprinkle with salt and pepper. Add 2-3 cups of water.
Step 2
Cook in oven for 1 hour at 180 degrees
Step 3
After 1 hour, remove the juices by straining into a jug.
Step 4
Turn chicken over and place back into oven for 15-20mins until brown.
Step 5
Boil water and add to hot juices in jug to make 1.5 cups liquid per 1 cup of rice. Ie 3 cups of rice = 4.5 cups of liquid.
Step 6
In a large pan with a lid, add 1/3 cup olive oil and brown the onions.
Step 7
Add tomato paste, spices and 2tsp salt. Stir.
Step 8
Add a little liquid gradually. Bring to the boil. Add the rice and stir.
Step 9
Turn stove down to low heat. Cover pan, and let cook for 20 minutes.
