1 headcauliflower
small, chopped into small florets

1can chickpeas
drained and rinsed, or 1.5 cups cooked

1 ¼ cuplentils
cooked, or swap with farro or quinoa

½ cupcarrot
grated, adds fiber + color

¼ cupsunflower seeds
or pumpkin seeds

¼ cupdried cranberries
optional, adds sweetness and fiber

½ cupfeta
crumbled, or diced cheddar, for flavor and protein

2 Tbspnutritional yeast

Instructions
Step 1
Steam or blanch the broccoli and cauliflower florets for 1–2 minutes if you prefer them slightly tender. Cool quickly with cold water or ice bath.
Step 2
In a large bowl, combine the broccoli, cauliflower, chickpeas, quinoa, carrots, onion, and any optional add-ins.
Step 3
In a small jar or bowl, whisk together the dressing ingredients.
Step 4
Pour the dressing over the salad and toss thoroughly to coat everything evenly.
Step 5
Let sit for 30 minutes before serving, or refrigerate overnight for better flavor melding.
