Greek pasta salad

Greek-Style Pasta Salad
Ingredients:
- 1 cup cooked fusilli pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup diced red bell pepper
- 1/4 cup Greek olives, sliced
- 1/4 cup crumbled feta cheese
- 1 shallot or 2 green onions, finely sliced
- 1-2 cups arugula
- Juice of 1/2 lemon
- 2 tablespoons olive oil
- Salt and black pepper, to taste
Directions:
1. Cook the fusilli according to package directions. Drain and let cool.
2. In a large bowl, combine pasta, cherry tomatoes, bell pepper, olives, feta, and shallot/green onion.
3. Toss with olive oil, lemon juice, salt, and pepper.
4. Gently mix in arugula just before serving.
