Instructions

Step 1
Mix together starter and warm water
Step 2
Add salt and flour. Mix well with your hands to get it really mixed together
Step 3
Cover and Sit for 1 hour on the counter
Step 4
Stretch and fold the dough and rest for 30 minutes. Repeat 3 more times for a total of 4 stretch and folds.
Step 5
After the 4th stretch and fold, Sit and ferment on the counter for 2 hours.
Step 6
Turn out the dough and shape it. Cover and Wait 20 minutes.
Step 7
Shape again, place the loaf in a bannaton, cover and place in fridge for 2 hours.
Step 8
Score and bake in Dutch oven at 500 degrees for 35 minutes.
Step 9
Remove lid and lower temperature to 425 and bake for 10 minutes.
Step 10
Cool and enjoy!
