Ingredients

1 lbpasta
uncooked, penne and rigatoni work great

1 cuppasta water
reserved

1 Tbspolive oil

1 poundItalian sausage
mild or hot

0.5sweet onion
medium, diced

4garlic cloves
minced

3 TbspPesto Sundried Tomato
Homemade

4 ozcream cheese

6 Tbspheavy cream

¼ cupshredded parmesan cheese

0.25fresh basil
chopped

1 PinchRed pepper flakes
optional

salt

Instructions
Step 1
Heat the oil in a large skillet over medium-high heat and saute the onions until they start to soften, about 8 minutes. Stir in the garlic, red pepper flakes (optional), and a good pinch of salt and a few cranks of black pepper. Crumble the sausage into the skillet and cook with the onions and garlic until browned.
Step 2
Stir in sundried tomato pesto and sautée for a couple of minutes to allow the flavors to meld.
Step 3
Boil pasta with several pinches of salt to just Al dente. Drain and rinse with a little cold water to prevent further cooking. If your sauce is not ready, toss pasta with just a little bit of olive oil to prevent sticking.
Step 4
Turn heat to medium-low, add cream cheese, and heavy cream. Allow to melt and incorporate with all your ingredients. Add chopped basil and mix well.
Step 5
Add 1/4 of reserved pasta water, mix well. Add pasta and mix gently. If needed, add 1/4 cup of reserved pasta water at a time to get desired texture.
Step 6
Add parmesan cheese on top and serve.
